Kuidas lahti saada mangodest. How to get rid of mangos

Sellel nädalal tellisin mangosid, et saata pojaga Eestisse. 20 kilo on aga väga väike kaalu maht .. võrreldes mangode kogusega, mida saab Kenyast lihtsalt osta ... Nii jäigi mulle alles korvi põhja mangosid. Kuna mu lemmik puuvili on papaija ja mitte mango, siis asusin otsima võimalusi nendest lahti saamiseks.

This week I ordered some mangoes for my son to take to Estonia. 20kg luggage allowance is very small .. when compared the the mangoes that are available to take from Kenya .. That is how I was left with some mangoes. Since my favorite fruit is papaya, not mango, I needed ways to get rid of the mangoes.

I started with an open mango pie

Ja siis banaani - mango muffinid
Then banana - mango muffins

Juhul, kui kellelgi teisiel on samasugune olukord, jagan hea meelega retsepti (mango juppe selles retseptis võib edukalt asendada rabarbri või õuna juppidega)
Just in case you might find yourself in a similar situation, here is one of the recipes to help you out (mango pieces in this recipe can be substituted with rhubarb or apple pieces)

BANANA-MANGO MUFFINS
2 medium eggs
2/3 cup milk
1/4 cup vegetable oil
1 cups all-purpose flour
1 cup oat flour
3/4 cup granulated sugar
1/2 cup mashed banana
1 tbsp. baking powder
1/2 tsp. salt
1 1/2 tsp. nutmeg
1 cup finely chopped mango
In a small bowl, beat the eggs with a fork.
Stir in the milk, vegetable oil, and the mashed banana, and set aside.
In a larger bowl, combine the wheat flour, oat flour, sugar, baking powder, salt and nutmeg.
Add the egg mixture to the dry mixture stirring just to combine, (the batter will be lumpy).
Add the mango pieces, just to combine, do not over-mix.
Fill prepared muffin cups (greased or papered), about 3/4 full of batter.
Bake at 200° C for about 22 minutes or until a toothpick inserted in the middle comes out clean and the edges of the muffins are becoming brown.
