Butternut-leak puree soup

Dinner

Peal, clean and chop equal volume of leak and butternut.
Chop a piece of ginger (size depending on your liking of its flavour)
Set water to boil, just enough to cover the ingredients. When boiling place in the ingredients.
Add a vegetable or chicken stock cube.
Allow to boil for 10 minutes.
Puree. Add 2 teaspoons of butter per serving.

juice of 1/2 lemon

Grilled thinly sliced zucchini
Grilled thinly sliced red bell pepper
Grated carrot
Diced tomato
Diced cucumber
Pieces of lettuce
-- Total 332 grams --
Tuna fish (112 grams)
Ground toasted linseed (2 grams)
Olive oil
Lemon juice


Freedom from addiction

For a while now I have been aware that my manner of eating things that are made of wheat and/or contain refined sugar has not been healthy and normal. Milk and its derivatives have also an effect on me. My emotions would determine what I eat and later, what I have eaten would have an impact on how I feel. Vicious cycle. If you replace the concept of sugar with alcohol, you would have a more commonly recognized vice! I have looked back at my childhood binges of chocolates and sweets, to the point of stealing them from my brother's locked drawers, pinching from my friend's visitor's displays. The times I would frantically ransack my house for any left over sweets or chocolates or biscuits. And when there is nothing, my cooking and baking skills would allow me to turn anything into a craving satisfying sugary treat. The next morning I would feel horrible for having eaten everything I know I should not have. A feeling of lack of control, just not being able to stop, addicted. Not surprisingly, my weight has done five times each +20kg and -20kg jumps over the past 20 years.

A month ago, in a moment of clarity, I remembered having read an article about a psycologist who deals with food addiction. On August 20, 2014 I stopped eating any food made of or containing any grains, any cane or beat sugar, any potatoes, any dairy, any highly sugary or starchy fruits. Since I love cooking the new list of food ingredients, that I had never looked into, gave me new exciting challenges. I had food quotas I needed to fill up with tasty stuff. Namely:

Breakfast: 284 grams of fresh vegetables, 57 grams of nuts and seeds, 226 grams of fruits
Lunch: 227 grams of fresh vegetables, 227 grams of cooked vegetables, 114 grams of protein
Dinner (no later than 6pm): 227 grams of fresh vegetables 227 grams of cooked vegetables, 114 grams of protein.

These are now my only times to eat. Nothing at all (except water, water with lemon juice or herbal teas) in between.

Kuidas lahti saada mangodest. How to get rid of mangos

Sellel nädalal tellisin mangosid, et saata pojaga Eestisse. 20 kilo on aga väga väike kaalu maht .. võrreldes mangode kogusega, mida saab Kenyast lihtsalt osta ... Nii jäigi mulle alles korvi põhja mangosid. Kuna mu lemmik puuvili on papaija ja mitte mango, siis asusin otsima võimalusi nendest lahti saamiseks.

This week I ordered some mangoes for my son to take to Estonia. 20kg luggage allowance is very small .. when compared the the mangoes that are available to take from Kenya .. That is how I was left with some mangoes. Since my favorite fruit is papaya, not mango, I needed ways to get rid of the mangoes.

I started with an open mango pie

Then banana - mango muffins

Juhul, kui kellelgi teisiel on samasugune olukord, jagan hea meelega retsepti (mango juppe selles retseptis võib edukalt asendada rabarbri või õuna juppidega)
Just in case you might find yourself in a similar situation, here is one of the recipes to help you out (mango pieces in this recipe can be substituted with rhubarb or apple pieces)

BANANA-MANGO MUFFINS
2 medium eggs
2/3 cup milk
1/4 cup vegetable oil
1 cups all-purpose flour
1 cup oat flour
3/4 cup granulated sugar
1/2 cup mashed banana
1 tbsp. baking powder
1/2 tsp. salt
1 1/2 tsp. nutmeg
1 cup finely chopped mango
In a small bowl, beat the eggs with a fork.
Stir in the milk, vegetable oil, and the mashed banana, and set aside.
In a larger bowl, combine the wheat flour, oat flour, sugar, baking powder, salt and nutmeg.
Add the egg mixture to the dry mixture stirring just to combine, (the batter will be lumpy).
Add the mango pieces, just to combine, do not over-mix.
Fill prepared muffin cups (greased or papered), about 3/4 full of batter.
Bake at 200° C for about 22 minutes or until a toothpick inserted in the middle comes out clean and the edges of the muffins are becoming brown.

Uji - Kenya puder

Hommik algab paljude kenyalaste jaoks tassi uji pudruga. Seda pool veedelat putru juuakse kuumalt või külmalt suure hulga suhkruga. Seda tehakse kodus, antakse koolisööklates, tänavaäärsetes söögikohtades ning tuuakse ka 15-liitriste nõudega ehitusplatside serva ja juuakse suurtest värvilistest plastmasstassidest.

Uji on swahili keeles puder, mistahes puder, aga enemasti mõeldakse selle all pruuni kisselli-laadset hirsist tehtud piimata putru. Hirss, mida kasutatakse uji jaoks ei ole mitte Eestis tuntud kollane pehme pudrumaterjal. Siin kasvatatakse Korakaani sõrmhirssi, mida loetakse toitaine väärtuse poolest parimate teraviljade hulka. Sellel on lihtsasti omastatav valk ja väga palju rauda.
Enamus kenyalasi aga ei hooli palju selle teaduslikust väärtusest, lihtsalt teatakse, et aastasadade vältel on emad seda ujit oma peredelt teinud ja see on mõnusalt kõhu ära täitnud. Uji on esimene söök, mida antakse imikutele rinnapiima juurde, või selle asemel. See on toit, mida tavaliselt antakse raskelt haigetele inimestele kosumiseks. Vaesemates peredes, ja piirkondades, kus hirsi pole saada, tehakse ujit maisijahust, aga selle toiteväärtus on väga madal ja põhjustab sageli lastel valetoitumisega seostatud punnkõhtusi. Paljudel peredel on uji ainuke toit, ja on aastaaegasid, kui ka seda ei jätku kõigile pereliikmetele. 

Mõned pereemad lisavad hirsijahule juurde kassava jahu ja/või sorgo jahu. Kikuyud jahvatavad herne- ja oaliike ja tugevdavad sellega putru. Viktooria järve kaldal elavad Luod panevad ka kuivatatud omena kala jahu. Kõigi nende jahude seguna hakkab see juba natuke kama meenutama

Mina teen ujit ainult hirsi jahust, mitte kunagi maisijahust. Nii nagu ka kisselli puhul, panen vee keema ja segan teises kausis hirsijahu ja vee kuni kõik jahuklimbid on ilusti ära segunenud. Valan segades keevasse vette ja sega hoolega, et klimpe ei tule kuni läheb uuesti keema. Pärast umbes 10 minutilist keetmist võtan tulelt ära, lisan sidrunimahla ja suhkrut ja viin lauale. 

Lisamärkmed Kenya sidrunid ongi rohelist värvi, kui nad on söömisvalmis. Kõiki kuivaineid tuleb hoida korralikult kinnikäivates purkides, muidu teevad kuivainekoid laastava töö.
